After much discussion with the team, we decided to leave this wine on its incredibly flavoured lees for the past 8 months. It has been well over ten years since we have have softened our Riesling by ageing it for this period of time, but we are more than pleased we did.
The 2018 vintage gave us the best growing conditions we have seen in the highlands for the past 24 years and we had to take advantage of the gods giving us the quality of Riesling it has this year. The concentration of citrus and apple notes is complimented by the soft acid pallet.
